Summer supper

When it’s hot, I don’t feel like cooking. We made this again last week during our ongoing western heat wave and it was great- not only because it does not require heating up your kitchen, but because it’s so fresh and delicious.

Summery Beef Fajitas

serves 2-3

1 Tbsp lime juice
1 Tbsp  maple syrup
1 tsp soy sauce
1/2 tsp sriracha sauce or chili garlic sauce
2 tsp vegetable or grape seed oil
2 tsp  sesame oil
salt to taste
flour tortillas
1 small steak, grilled and sliced
whatever  vegetables hit your fancy (tomato, red onion, avocado, lettuce, and chopped basil are our favourites, but you could add just about anything. For more kick, add some chopped jalapenos)

Combine lime juice, maple syrup, soy sauce, sriracha/chili garlic sauce, and oils together. Stir or shake well to combine. Add salt  to taste and set aside. Grill beef until done to your liking, and set aside to rest. Grill tortilla shells until warmed, and assemble fajitas. Add dressing and enjoy!
